Ingredients

  • 150g Organic red lentils
  • 2 tsp cumin seeds & 1 tsp coriander seeds, toasted
  • 2 leeks, cleaned and chopped
  • 2 garlic cloves, finely chopped
  • 1l veg stock
  • 400ml coconut milk

Method

  1. Sauté the leek and garlic in a small drizzle of olive oil for a few minutes, then add the spices and lentils, stirring until well combined.
  2. Add the veg stock and coconut milk, simmer for around 25 minutes until the lentils are cooked.
  3. Season to taste and add a pinch of crushed chillis if you like for an extra kick.
  4. Serve with fresh baked bread and vegan spread or butter of your choice!
