Ingredients
- 150g Organic red lentils
- 2 tsp cumin seeds & 1 tsp coriander seeds, toasted
- 2 leeks, cleaned and chopped
- 2 garlic cloves, finely chopped
- 1l veg stock
- 400ml coconut milk
Method
- Sauté the leek and garlic in a small drizzle of olive oil for a few minutes, then add the spices and lentils, stirring until well combined.
- Add the veg stock and coconut milk, simmer for around 25 minutes until the lentils are cooked.
- Season to taste and add a pinch of crushed chillis if you like for an extra kick.
- Serve with fresh baked bread and vegan spread or butter of your choice!
